I must confess I am not cooking near as much as I should be – thanks to my fantastic mother. In fact, this post is pretty much guaranteeing that this will be my kick in the butt to get back in the game. However, last week while the rents were out of town we realized we were going to have to eat something, and it might as well be appetizing.
Steve loves to grill so we decided to make some homemade pizzas we had created when we lived at Saunders Woods. The recipe is super easy and delicious.
Grilled BBQ Tostada Pizza
serves 4
4 tortillas (we use Mission)
BBQ sauce
Ranch dressing
Shredded chicken
Shredded mozzarella cheese
Heat the tortillas on the grill for about 2-3 minutes until they are toasted on one side. Remove and set aside. To the toasted side; add a handful of shredded chicken, a few squirts of BBQ sauce and ranch dressing. Sprinkle with cheese. Place back on grill until cheese has melted and warmed through. Remove and cut with pizza cutter. Each pizza yields about 4 pieces which is perfect for personal pizzas.
We also change it up and instead of BBQ sauce will add Frank’s Red Hot sauce and blue cheese dressing to make a Buffalo Chicken version. Last night we made regular pizzas with red sauce and cheese (and other toppings; spinach, pepperoni)– the possibilities are limitless and the fact that it takes about 15 minutes to make from start to finish makes this dish a big summertime favorite of ours.
